What You'll Need:

Place the following ingredients in a large bowl and blend with mixer or wire whisk:
• 2 cups pumpkin (16 oz. can)
• 4 eggs
• 1 cup oil
• 2 cups sugar

Stir together the following dry ingredients:
• 1 teaspoon pumpkin pie spice
• 2 teaspoons cinnamon
• 1/4 teaspoon salt
• 1 teaspoon baking soda
• 2 teaspoons baking powder
• 2 cups flour
Add to moist ingredients and mix well. Pour into a greased jelly roll pan. Bake at 350 degrees for 20-25 minutes. Cool and frost.

Cream Cheese Frosting
• 3 oz. package of cream cheese (softened)
• 1/2 cup soft butter
• 1 teaspoon vanilla
• 1-2 teaspoons milk
• 2-3 cups powdered sugar
Blend until smooth and frost cooled pumpkin bars.
